2 cups flour
1 tablespoon baking powder
1 teaspoon cinnamon
1/4 heaping teaspooon each of cloves,ginger,nutmeg,mace and salt
1 cup dark brown sugar
3/4 cup white sugar

Mix these ingredients together.
Add:
1 cup coconut
2 cups shredded carrots
1/2 cup raisins
1 chopped apple
1/2 cup chopped pecans

Preheat oven to 375F.Beat 3 eggs with 1 cup oil and 1 tablespoon vanilla.Add the egg mixture to the dry ingredients.This recipe makes 12 muffins using the over sized tins or 24 smaller ones.Bake about 30 to 45 minutes.
